Grillin’ Fab Five

Today’s grillin’ fab five is a continuation of the posts that I have shared with you the past couple of weeks.  One of the best ways to beat the summer heat is by grillin’ your meals.  I went thru my site and picked my top 5 favorite grilling recipes, (that is besides grilled pizza).  Also be sure to join me next week here at RMK, it’s gonna be S’mores Week!

First off is grilled shrimp skewers.  I love me some “shrimp on the barbie”.  You can eat them as is on the skewers or they are a great addition to a salad.  Shrimp also are quick to marinade and cook!  I like to buy mine frozen from Costco.

 

These pork tacos with pineapple salsa are a fun change for summer grilling.  I love the fresh pineapple salsa on these.  So nice and refreshing!

 

I love these pineapple apricot chicken skewers.  This simple marinade starts with pineapple apricot preserves.  So easy and full of flavor.  If you don’t want to go to the effort of making the skewers, by all means just marinate and grill chicken breasts instead!  Do I have your mouth watering yet?

 

Now we move onto to these grilled chicken breast tostadas.  These are so refreshing.  You grill tortillas to make your tostada shell.  Then instead of having a bean base on these totadas, it uses guacamole as the base followed by marinated grilled chicken, pico de gallo, and sour cream.  Another yummy and refreshingly delicious summer meal!

 

Now I couldn’t do a fab five on grilling without including a grilled dessert.  This is a grilled peach dessert that you make in a foil packet.  This quick and simple dessert is made with 6 ingredients and is perfect topped with a scoop of ice cream.  You can always mix this one up by using different fruit or cookies.  I think I am gonna have to try it with some fresh pineapple and coconut cookies (minus the cinnamon) next week!

  2. Haha! I just read Deborah’s comment and had to laugh because I too have a S’mores week planned for my blog in two weeks! There is just something about that classic S’more flavor that is so hard to resist! Look forward to seeing all of the S’mores recipes you have to share next week!

  4. We seriously do think alike!! Earlier this week I posted a s’mores pancake recipe, and said that I had planned on doing a s’mores week (but I backed out!) Melanie from Mel’s Kitchen Cafe said she is doing a s’mores week, as well. We should all be neighbors!!! 🙂
