There is only 2 weeks left of summer and I have an easy black bean dip to share. It has been the busiest summer I have ever had as a mom. You would think that with having older kids your summer would be easier, but that has not been the case at my house. It has been fun, but I am ready for the kids to go back.
I am in need of a regular schedule where people get up at the same time and go to bed at the same time. I need to not have people at home making messes all day long and being the entertainer for my youngest. Summer has been fun, but I want the structure of a school day back. I am craving this end of summer just like I crave chocolate.
That being said we are trying to squeeze in a few fun things before school starts like going to the zoo (yes, I have not been to the zoo yet) and a visit to a local amusement park. If you have an end of summer get together to go to or just need a healthy snack for the kids this black bean dip recipe I am sharing today is perfect.
This really is more like a hummus but of a mexican variety. It all gets pureed in you food processor or high powered blender to make a nice smooth dip. It also only takes 5 ingredients and you probably have them all on hand. I recommend serving this with tortilla chips but feel free to find other thinks to dip into this like veggies or crackers.
Easy Black Bean Dip
Ingredients
- 1 (15 ounce) can Bush’s black beans, rinsed and drained well
- 1/2 cup medium salsa
- 2 Tbsp lime juice
- 2 Tbsp chopped cilantro
- 1/4 tsp cumin
- salt and pepper to taste
Instructions
- In a food processor or high powered blender (like a Blentec), add all of the above ingredients and process until smooth.
- Serve with tortilla chips. Makes 1 1/2 cups dip.
