Chocolate Sugar Cookies

If you love sugar cookies, you will love this chocolate version. If you aren’t a sugar cookie fan, you will probably love these chocolate sugar cookies. My husband is not a sugar cookie fan, but loved this chocolate version.
Think of all that you love about a no roll sugar cookie, but with the addition of chocolate. The combination of melted and softened butter give the cookie a nice texture.


Chocolate Sugar Cookies

Ingredients
- ½ cup butter melted
- ½ cup butter room temperature
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 ½ tsp vanilla
- 2 cup flour
- ¾ cup + 2 Tbsp unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp kosher sea salt
- â…“ cup granulated sugar for rolling
Instructions
- In the bowl, beat the butter and sugars with a mixer for about 4 minutes until light and fluffy.
- Add in eggs, one at a time, mixing well after each addition. Add vanilla with the last egg.
- In another bowl, whisk together the cocoa powder, flour, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture and mix until a soft dough forms.
- Cover the dough with plastic wrap and refrigerate for at least 1 hour.
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and scoop dough with a cookie scoop. Roll each cookie in the 1/3 cup granulated sugar and place on prepared sheet.
- Bake for 8-10 minutes at 350 degrees. The cookies should be soft in the center but set on the edges.
- Remove from the oven and allow the cookies to cool on the sheets for 5 minutes before transferring to a wire rack to cool completely. Makes 2 dozen.
