This is a simple recipe for Buttermilk Pancakes that you can throw together and have pancakes from scratch. It was quick and easy and the whole family loved them.
The recipe came from Hillary at Dinner On a Dime. The only downside to these pancakes was the batter is not that sweet.
We tried these babies with fruit syrup and regular syrup. Because the batter is not that sweet we preferred these pancakes with regular old syrup. Maybe a little vanilla extract in the batter would help.
In a large bowl, whip the egg, sour cream, and buttermilk together with hand mixer.
Then add in the remaining ingredients and mix by had just until incorporated.
Drop batter 1/8 c. at a time onto greased griddle warmed to medium heat. Cook until top bubbles, then flip and cook until done. Makes about 24 small pancakes. (I made them bigger with 1/4 cup batter and it made about 12). Serves 6.

Sorry, things have been crazy since I got back to my blog. You may have had bad (old) baking soda or baking powder. I also allow the batter to rest a little bit before cooking it. You will notice when you do that, that the batter will puff up in the bowl. It allows the soda and powder to start working. Over mixing could have also been a problem. Hopefully this helps.

Hi! I made these over the w/e and not sure where I went wrong. It was my first time making pancakes from scratch though so that could be it. The pancakes weren’t “fluffy” enough and you could still taste the batter, even though they were cooked through…if that makes sense. Where do you think I went wrong? If was definitely me and not the recipe! I know a common problem is overmixing, so that could be it. They also expanded when I cooked them!

You need to try the chocolate chip pancakes posted on joythebaker.com. I have made them with and without the chocolate chips, and they are good to eat even without syrup! Trust me!
