Easy Blackberry Cake Mix Muffins

I love berries. I love them all: blackberries, raspberries, blueberries, and strawberries. They recently had blackberries on sale at my local store and I had to buy some. Then I remembered I had a recipe for easy blackberry cake mix muffins I had been holding on to for a while to try.
The recipe came from a fellow member of a forum site I am part of called pinching your pennies. The member has the screen name Deweyville. There are many variations to the recipe so I included them all for you.
Just made sure if you make the blackberry/raspberry version or the chocolate version, keep a spoonful of cake mix out to toss the berries or chocolate chips in. If you do this before you add them to the batter, it will prevent them from sinking in the muffin.

Blackberry Cake Mix Muffins and other variations

Ingredients
  

  • 1 18.5 oz Cake Mix
  • 1 tsp baking powder
  • 2 Tbsp flour
  • â…” cup milk
  • â…“ cup oil
  • 3 eggs
  • see notes for flavor variations

Instructions
 

  • Preheat oven to 375 degrees.
  • Mix ingredients together and then fold in additional mix ins.
  • Add batter to lined muffin cups and fill 2/3 full. bake at 375 degrees for 15-20 minutes. Makes appox. 16 muffins.

Variations to make:
Chocolate Muffins
Chocolate cake Mix
1 cup Chocolate Chips
Almond Poppy seed Muffins
White Cake Mix
2 tsp Poppy seeds
1 tsp Almond Extract
Raspberry or Blackberry Muffins
Vanilla or French Vanilla Cake
Mix 1-2 cup fresh Raspberries or Blackberries
Lemon Poppy seed Muffins
Lemon Cake Mix
2 tsp Poppy seeds

    I was really stressed the other day, Grandchildren wanted muffins I didn’t have 1/3 of what I needed to make them from scratch, car was in the shop!! So I got creative; Using Lemon cake mix ” your basic recipe” I added 1 1/2 – 2 cups of fresh Blueberries….definitely gonna do it again! Moist delicious, and Blueberry’s & Lemon are really good together! Thank You so very much 🙂

  2. What size cakemix, please? I’m assuming the 18.5 ounce but I’m wanting to use the box of Jiffy I have on hand, which is 9 oz. Guess I’ll just use 2 eggs and try to cut the rest of the ingredients in sorta half.

      I used yellow cake with fresh raspberries and mini chocolate chips. Also used applesauce and a tsp of vanilla instead of eggs. These are delicious! Thank you.

  6. Oh I love the things we tell ourselves…that these are “muffins” and somehow not “cupcakes”, because muffins are healthier!

    They look and sound great and I readily admit I love things that start with a cake mix (which is just flour, baking stuff and sugar, right, so that’s allowed!)
