Baked Potatoes – Endless Possibilities

by Laura

So today’s post isn’t really a recipe, but hopefully it will have you looking at baked potatoes differently. A lot of this information came from a recipe article in my Jan/Feb issue of Simple and Delicious. Baked potatoes are really versatile and are a great way to use up leftovers from the fridge. With the baked potato also comes the sweet potato. There are some really fun ideas to top those too. Hopefully, I give you some inspiration and have you looking differently at the baked potato or sweet potato. The one have have for my picture was topped with traditional cheese and chili, but then I added olives and green onion. I forgot to add the sour cream for the picture, but we used that too.
