So today’s post isn’t really a recipe, but hopefully it will have you looking at baked potatoes differently. I’m talking Baked Potatoes – Endless Possibilities! A lot of this information came from a recipe article in my Jan/Feb issue of Simple and Delicious. Baked potatoes are really versatile and are a great way to use up leftovers from the fridge.
With the baked potato also comes the sweet potato. There are some really fun ideas to top those too. Hopefully, I give you some inspiration and have you looking differently at the baked potato or sweet potato. The one have have for my picture was topped with traditional cheese and chili, but then I added olives and green onion. I forgot to add the sour cream for the picture, but we used that too.

- roasted garlic and feta cheese

- turkey, mayo, tomato, and bacon
- queso and black beans
- barbecued beef
- pizza sauce and toppings
- taco leftovers
- blue cheese and bacon
- hoisin sauce, beef, green onion
- pesto sauce and sauteed mushroom
- barbecued chicken, cheese, green onion
- chicken, ham, swiss, and alfredo sauce
- ham, cheese, red pepper, green pepper
- beef, peas, carrots, and brown gravy
Sweet Potato toppings
- marshmallows and golden raisins
- apple pie filling and walnuts
- caramelized onions
- cottage cheese and peaches
- candied pecan and raisins
- chipotle peppers and sour cream
- toasted pecans and caramel sauce
- sauteed spinach, garlic and mushrooms
- ham and swiss
- chocolate chips and whipped topping
- cinnamon honey butter and toasted pecans
