I love the flavor of coconut. I love the flavor of lime. However, coconut and lime together is a well made match. There is only 2 ingredients needed to make this. You will love this simple 2 ingredient coconut lime sorbet.

I have recently fallen in love with sorbet. It is less calories than ice cream and full of fruity flavor. I love the creaminess that you get when using coconut in sorbet. All you need to make this is some cream of coconut. You can find this in the specialty drink section at your local grocer.

Then you need some lime juice. You can use fresh that you squeeze yourself. However, the stuff in the bottle also works just fine. You will also need some water too, but I don’t count that as one of the ingredients.

This 2 ingredient coconut lime sorbet recipe is too easy not to make! I make this in my Cuisinart ice cream maker. If you don’t have an ice cream maker you could just place in an air tight container and freeze. However, I do think the results are a little better in the ice cream maker.

  • CREAM OF COCONUT (FOUND IN THE SPECIALTY DRINK SECTION)
  • LIME JUICE
  • WATER

Ingredients
  

  • 1 15 oz container Cream of Coconut (found in the specialty drink section)
  • cup lime juice
  • ¾ cup water

Instructions
 

  • In a bowl, whisk together the above ingredients until well blended.
  • Freeze according to ice cream maker's manufacturers instructions. Eat straight from the ice cream maker or freeze for a firmer consistency. Serves 4-6.

  2. Tried this recipe. Exact measurements, produces a singular block of ice, no coconut taste largely as it’s completely drowned out by the lime. :o(

  4. This sounds great, but Cream of Coconut has sugar in it–and not just a tiny bit. This one doesn’t fit the \skipping sugar\ theme unfortunately. Still, sounds yummy.
