Zucchini Carrot Muffins

I have been on the look out for some more zucchini recipes.  My garden is still giving me lots of zucchini.  I found several fun muffin recipes to try out and this happens to be one of them.  Now, I found this one for zucchini carrot muffins over at Multiply Delicious who adapted it from King Arthur’s Flour.  I made my own slight adaptations too.  This makes a small batch of muffins – 6 regular or 20 mini.  I made the mini’s which worked out perfectly to fill my Demarle Mini Muffin tray.  If you want more just double, triple or quadruple the recipe.

These muffins are fabulous, nice and moist.  You also get a nice warm spice flavor from the cinnamon and nutmeg.  I must say that I do like these zucchini carrot muffins best when they are warm from the oven with a little Canola Harvest (or you could do butter) spread on them.  I love the combination of the zucchini and carrot together.

Make sure to stop by next week for breakfast week.  We will be talking all week long about recipes to serve for breakfast or dinner.  I love to make breakfast for dinner.  A few of them would also work great as a snack or even a dessert too.

Zucchini Carrot Muffins

Ingredients

Units Scale
  • 1/2 cup sugar
  • 2 tablespoons canola oil
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1/4 cup pecan gems
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 375°F. Line 6 cups of a standard muffin tin (or 20 mini-muffin cups) with papers, or grease each cup.(I used my Demarle Mini Muffin pan so I didn’t have to grease or line!)
  2. Whisk together the sugar, oil, salt, and egg.
  3. Add the zucchini, carrots,  and pecans.
  4. Whisk together the remaining ingredients in a separate bowl, then add to the batter. Stir till just combined.
  5. Divide the batter evenly among the prepared muffin cups. Let the muffins rest for 10 minutes before placing them into the oven.
  6. Bake the muffins until the edges are lightly browned and they feel firm if gently pressed, about 18 to 25 minutes for the regular sized muffins (for me it was 10 minutes for the minis). A cake tester inserted into the center of a muffin should come out clean.
  7. Remove the muffins from the oven, and cool them in the pan for 10 minutes; transfer to a rack, and cool. (I like to eat them warm)

I made these today. I think they’re good. My husband thought they smelled good but wouldn’t eat them. LOL I thought the 6 muffins were too big (and I don’t have a mini muffin pan, darn). My kids won’t eat muffins that huge (they’ll just eat half and it’ll go to waste), so this recipe would stretch to 12 muffins for us (just a tip for someone reading).

I have seen these Booty bags in the grocery and always wanted to try them. I think all the flavors sound yummy but I guess I’d pick the bbq one to please everyone in the house. And thanks for the great recipe too. I have a lot of zucchini leftover from our CSA and this will be perfect!

My friend Lauren led me to your site, and I love this first recipe for using up one of my favorite vegetables, zucchini!
I love cheesy snacks so my choice of Pirate’s Booty would have to be the aged white cheddar. Sounds delicious!

I made these muffins today and they were amazing. I added raisins to half and will definitely do that again. Also, I subbbed 1/2 of the flour with whole wheat flour and they were delicious. Thanks for sharing!

We love Pirate’s Booty. We buy it at Costco, but I didn’t know they had other varieties. I would like to try the Sea Salt and Vinegar…those are my favorite kind of chips!

I usually have load of Zucchini is garden, not this time, I am going to still make this from store bought Zucchini, with cheese and salt inside it, somehow I am craving savory dishes lately. Humm..wonder what happened to my sweet tooth! 🙂

My sister and I ate Pirates Booty in between our legs at Hood to Coast this year. (A 197 mile relay from Mt. Hood to Seaside, Oregon) It was a great snack and kept us going. I love the white cheddar flavor!

I would probably love the aged white cheddar but real reason for my leaving a comment…I have that same OVER abundance of zucchini. I can only shred and freeze so much too for baking in the winter. BUT, I’ve been making a dish I love for years and years and it’s so different from most I see out there thought you might enjoy. I did not say it was low fat!
