These watermelon fries with fluffy dip are a fun and refreshing treat for summer. Fresh watermelon is cut into fry-shaped sticks and served with a light, creamy dip that is perfect for parties, snacks, or easy summer desserts. It is a simple recipe that feels extra fun and is quick to make.
Start by cutting the watermelon in half, then cut one half into thick round slices. Lay each slice flat on your cutting board and trim away the rind if you do not want it on.
From there, cut each slice into long strips about the size of thick fries. From there, cut them in half to make them easier to serve.
Add marshmallow cream and cream cheese to a medium sized mixing bowl. Beat together with a hand mixer for about 1-2 minutes till totally smooth.
Add in 1/3 of the cool whip and beat until well blended. Add in the remainder of the cool whip and carefully fold into the mixture using a spatula.
Serve with watermelon fries. I think the dip is best if you can give it atleast an hour in the firdge before serving. It gets thicker.
Cover with plastic wrap or store in an airtight container in the fridge for up to 4 days.
