Tortellini Chicken Soup

Ingredients

Tbsp
olive oil
1
large onion
diced
3
cloves
of garlic
minced
4
carrots
diced
4
stalks of celery
diced

Tbsp
Italian seasoning
1
bay leaf

cups
of chicken broth
1
16 oz pkg. cheese tortellini (fresh or frozen)
2
bouillon cubes
salt and pepper to taste
shredded parmesan cheese
optional for serving

shredded cooked chicken
Instructions
In a stock pot, heat oil over medium heat. Add onion, garlic, carrots, celery, Italian seasoning, and bay leaf. Cook until vegetables are tender.
Add the chicken broth and bouillon to the pot and bring to a boil.
Add tortellini and simmer for 5 minutes or so until tortellini is tender.
Add cooked chicken and simmer for a couple of minutes until heated through.
Serve topped with parmesan cheese if desired. Serves 8-10.
