Summer Bean Salad

Ingredients

Bush's black beans
rinsed and drained

Bush's cannellini beans
rinsed and drained

Bush's pinto beans
rinsed and drained (red kidney beans would also work well)

chopped green chiles

red pepper
finely chopped
½
green pepper
finely chopped
½
red onion
finely chopped

stalk
celery
finely chopped

fresh cilantro

Dressing:
¼
cup
rice vinegar
¼
cup
olive oil
2 ½
Tbsp
sugar
¼
tsp
garlic powder
⅛
tsp.
cumin
Instructions
Combine dressing ingredients in a sauce pan. Bring to a boil then remove from heat and cool.
While dressing cools, prepared all other ingredients and place in a large bowl.
Pour cooled dressing over bean mixture and toss to coat. Makes 6-8 servings.
