Salad

8 oz baby spinach
16 oz pkg mini bowtie pasta (farfalle) or regular bowtie pasta
¼ cup almonds slivered
¼ cup green onions chopped
¾ cup bacon (about 5-6 slices) chopped
1 ½ cups strawberries sliced
¾ cup Swiss cheese diced

Strawberry Dressing

½ cup strawberry jam
¼ cup lemon juice
2 Tbsp apple cider vinegar
1 Tbsp olive oil
1 Tbsp mustard
1 tsp garlic minced
½ tsp salt

Instructions

Cook pasta according to package directions. Drain and rinse the pasta with cold water so it cools down.
In a large bowl, combine the spinach, cooked and cooled pasta, green onions, bacon, strawberries, and cheese.
Pour the dressing over the pasta salad and toss until combined. Serve right away. Serves 8 as a main dish or 12 as a side dish.
