1 ½tspdried oregano
12oz canevaporated milk
2Tbspcornstarch
2cupsbaby spinach or finely chopped kale

Instructions
Heat a large stock pot over medium heat. Add in the olive oil, carrot, and onion. Saute for about 3 minutes until the onions start to soften. Add in sausage and cook for a few minutes to start to brown then mix everything in pot together. Add in garlic and saute until fragrant, about 30 seconds.
Next, add in the potatoes, broth, salt, pepper, and oregano and stir to combine. Bring soup to a boil then reduce to a simmer. Simmer until potatoes are soft, about 15 minutes.
Put cornstarch in a small bowl and whisk in approximately equal amount of the evaporated milk. Whisk together until smooth.
When your potatoes are tender, pour the remainder of the evaporated milk into the soup, along with the cornstarch mixture. Simmer for 2-3 minutes until soup starts to thicken.
Add in the spinach or chopped kale. If using spinach, remove from the heat. If using kale, simmer for about 30 seconds and then turn off heat. Put a lid on the pot and let sit for about 5 minutes.
Ladle soup into bowls and sprinkle with parmesan cheese if desired. Serves 8.
