These slow cooker tacos al pastor are an easy way to enjoy bold, sweet, and savory al pastor flavors at home. Pork cooks low and slow in a flavorful sauce, then gets served in warm tortillas with fresh pineapple, onion, and cilantro. They are simple enough for a family dinner but delicious enough to feel like a special taco night.

Instructions
Add the enchilada sauce, brown sugar, coriander, and cumin to the slow cooker and mix well.
Rinse the pork roast and pat dry with paper towels. Liberally salt and pepper all sides of the pork. Place in the slow cooker on top of the sauce. Then turn the pork to coat both sides with the sauce.
In a bowl, combine the lime juice and pineapple juice. Pour over the pork in the slow cooker. Top with the onions and garlic. Gently spoon the sauce over the onions and garlic.
Cook in the slow cooker for 4-6 hours on high, or 8 hours on low.
Lift the pork above the slow cooker, allowing any excess sauce to drip back into the slow cooker; set aside to cool until it is easy to handle. Shred the pork using two forks.
Remove the sauce and vegetables from the slow cooker. Add the meat back in and enough of the sauce to moisten the meat.
Serve on tortillas and top with pineapple, onion, and cilantro if desired. You can also add a squeeze of fresh lime.
