Season the roast with salt and pepper and place in the slow cooker. Pour the chicken broth around the roast.
In a bowl, blend together the garlic powder, mustard and honey. Pour the mixture over the roast.Add the onion on top of the roast.
Cover and cook on low for 8-9 hours. Remove roast from the slow cooker and shred. Thicken the juices remaining the the slow cooker if desired by mixing 1 Tbsp cornstarch with 1 Tbsp water. Slowly adda little at a time into the juices until it reaches the desired thickness. Serves 4-8 people.
