- 1 cup butter at room temperature
- ½ cup creamy peanut butter
- ½ cup packed light brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2 cups semisweet chocolate chips
Instructions
- Preheat the oven to 375 degrees.
- In a bowl of a stand mixer, combine butter, brown sugar, sugar, and peanut butter and mix until smooth. Add in egg and vanilla and mix until smooth.
- Add in the flour, baking soda, and salt and mix until combined.
- Stir in chocolate chips.
- Scoop cookie dough using a regular scoop (heaping tablespoon) onto baking sheets, 2" apart. Bake at 375 degrees for 8-10 minutes.
- Remove the cookies from the oven and allow to cool on the sheets for 5 minutes. Transfer the cookies to a wire rack and cool completely. Makes 3 dozen cookies.
