Roasted Red Onion Mayo

Ingredients

large red onion
chopped

olive oil
salt and pepper
½
cup
mayonnaise
Instructions
Preheat oven to 425 degrees.
Place onion on a baking sheet. Drizzle with olive oil and season with salt and pepper.
Bake at 425 for 10 minutes. Allow to cool.
Add 3 Tbsp of the onion to 1/2 cup of mayo. Use immediately or store in the fridge for up to 2 weeks.
