Mini Peach Streusel Coffeecakes

peaches

Instructions
To make streusel
Stir together flour, sugars, and cinnamon.
Cut in butter with a pastry blender, 2 knives or pulse a few times in a food processor until coarse crumbs from.
Set aside.
To make cake
In a large bowl, whisk together flour, sugar, and baking powder
In a seperate bowl, combine egg, butter, milk, and extracts. Beat with an electric blender until well combined.
Add wet mixture to dry mixture and beat just until moistened. Do not over mix.
Divide batter evenly into 12 muffin tins that have been well greased or lined with paper liners.
Spoon diced peaches evenly on top of the batter in the muffin tins. Use back of spoon and lightly press peaches into batter.
Top peaches with streusel mixture.
Bake at 350 decrees for 20-25 minutes until topping is golden brown and toothpick inserted to the center of one of the cakes comes out clean.
Cool cakes for 20 minutes, remove from pan, and serve.
