These Instant Pot BBQ Chicken Sandwiches are a quick and flavorful way to enjoy tender, shredded chicken with bold barbecue flair. Seasoned, seared, and pressure-cooked to perfection, the chicken is tossed in a tangy sauce and piled high on toasted buns. In a small bowl, mix together BBQ seasoning, paprika, and salt. Rub the spice blend evenly over boneless, skinless chicken breasts or thighs.
