This quick and flavorful recipe combines browned ground beef and diced red bell pepper with ramen noodles in a rich peanut sauce. Garnish with chopped scallions and sesame seeds for an extra touch, and enjoy a delicious, easy-to-make meal in no time.
3(3 oz each) packages ramen noodles, seasoning packets discarded

Instructions
In a skillet, brown the ground beef with the red bell pepper. After fully cooking the beef, drain off any excess grease.
While the beef is cooking, boil a pot of water. Cook the ramen noodles only (disgard seasoning packets) for about 3 minutes until al dente. Drain, reserving 1 cup of pasta water.
Add the minced garlic and ginger to the cooked beef. Cook for 1-2 minutes until fragrant.
Add peanut butter, hoisin sauce, red chili sauce (if using), and soy sauce to the skillet with the beef. Mix well.
Pour in 1/4 cup of reserved pasta water to thin the sauce. Add more if needed to reach the desired consistency.
Add the cooked ramen noodles into the skillet, making sure to coat them well with the sauce. Season with salt and pepper to taste.
Garnish with chopped green onions and/or sesame seeds if desired. Serve immediately.
