These Easy Baked Ham and Hash Brown Breakfast Burritos are filled with eggs, ham, cheese, and seasoned O’Brien hash browns, baked together in a 9 x 13-inch pan. Instructions
Preheat the oven to 425 degrees. Spread out the hash browns on a baking sheet. Drizzle with olive oil. Toss to coat. Then sprinkle with the taco seasoning and toss again.
Bake for 20-25 minutes, stirring halfway through, until cooked and they begin to crisp.
Reduce the oven to 400 degrees. Spray a 9 x 13-inch baking dish with non-stick cooking spray. Spread the cooked hash browns into the bottom of the pan and sprinkle with the ham.
Add the eggs and sour cream or cottage cheese to a blender and blend until smooth. Pour over the hash browns and ham in the baking dish. Season with salt and pepper. Then sprinkle with cheddar cheese.
Bake at 400 degrees for 15-20 minutes, until a knife inserted in the center comes out clean. Cut into desired-sized portions. If prepping for later, allow the filling to cool before wrapping in the tortillas.
Wrap each portion of filling, fold in the sides, and then roll each tightly into a burrito. If serving later, wrap each burrito and store it in the fridge or freezer for later.

To reheat from the fridge - Wrap it in a slightly damp paper towel and microwave for about 1 minute, adding more time as needed until it's hot in the center.To reheat a frozen breakfast burrito - Microwave it from frozen for about 2½ to 4 minutes, flipping halfway through, until heated through. You can finish it in an air fryer or skillet for a crispier tortilla.
