Burke’s Crunchy Cookies are a delightful blend of chewy, crispy, and chocolatey goodness in every bite. Made with oatmeal, Rice Krispies, coconut, and chocolate chips, these cookies have the perfect combination of texture and flavor. Simple to make and impossible to resist, they’re a fun twist on classic chocolate chip cookies that will have everyone reaching for seconds!
Cream sugars and shortening well, then add eggs, one at a time and vanilla. Whisk flour, soda, baking powder together and add to sugar mixture. Lastly stir in (or use dough hook) oatmeal, rice krispies, and coconut, and chocolate chips.
Form into balls and place on an ungreased cookie sheet. Bake at 350 for 8-10 minutes (I cooked mine for 9 minutes). They should look a bit undercooked. Cool on cookie sheet for 2 minutes, then cool the rest of the way on a cooling rack. Makes 4 dozen cookies.
Notes
For smaller cookies, use a teaspoon-sized scoop and reduce the baking time to 6-8 minutes. to make larger, bakery-style cookies, use a 3-tablespoon-sized scoop and bake for 12-14 minutes.
