This balsamic chicken marinade is an easy way to create tender, flavorful grilled chicken with just a handful of ingredients. Balsamic vinegar, Dijon mustard, brown sugar, and thyme come together for a marinade that is rich, tangy, and perfect for summer meals. It also works great as a freezer meal, making it a simple option for easy meal prep and busy weeknights.
In a gallon-sized freezer bag, add all of the ingredients except the chicken. Whisk everything together.
Add in the chicken, remove as much air as possible, and seal the bag. Knead the chicken in the bag to coat it in the marinade.
If meal prepping, place in the freezer until ready to use. Take out 24 hours before grilling. Place on a dish in the fridge to thaw. Once thawed, discard marinade and grill until chicken is fully cooked.
If using right after making, place in the fridge to marinate for a minimum of 2 hours or up to 24 hours. The longer the better for flavor. Discard the marinade and grill the chicken until fully cooked. Serves 4.
