Bacon Egg Salad Sandwiches

Ingredients

softened reduced fat cream cheese

Tbsp
mayonnaise
I use reduced fat
½
tsp
salt
pepper to taste

hard boiled eggs
diced
2
Tbsp
diced chives
¼
cup
shredded cheddar cheese
4
strips of cooked bacon
crumbled
4
large croissants
split
Instructions
In a bowl, mix together the cream cheese, mayo, salt, and pepper until combined and creamy.
Add in the egg, chives, and cheese. Fold until combined. Store in the fridge at this point if needed.
Just before serving fold in the bacon and serve in croissants. Makes 4.
