6corn tortillas
1Tbspcanola oil
¼tspsalt
16oz can refried beansI like to use the spicy or green chile and lime kind
1½cupslettuceshredded
1cupcheeseshredded
½cupsour cream
½cupsalsa
Instructions
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or foil for easy cleanup.
Arrange tortillas on the baking sheet without overlapping. Brush both sides of the tortillas with oil and then sprinkle with a little salt.
Bake at 400 degrees for 4-5 minutes. Flip and cook for another 4-5 minutes. While the tortillas cook, warm the beans in a saucepan on the stove top.
When tortillas are done, allow them to cool for a minute or two. Spread a layer of beans over each tortilla. Sprinkle each with cheese, followed by shredded lettuce and any other desired topping.
