Sloppy joes are a classic family meal, but these Tex-Mex Sloppy Joes are a fun twist. The sloppy joe filling includes onion and green pepper like most traditional sloppy joes. However, this Tex-Mex version include the additional items of corn, black beans, salsa, and red pepper.
Also, you can fine cumin and taco seasoning helping to flavor the tomato base. That tomato base include tomato sauce, ketchup, and beef boullion. These are very hearty.
Since these are a step up from the normal sloppy joe, it deserves a bun that is also a step up. You place this filling on Bioche buns that have been toasted in the oven. As a result, it gives it the buns a little more stability to take on this loaded beef filling.
Finally, some shredded cheddar cheese is added in the as the finishing touch. If you really wanted, you could even add on some shredded lettuce. Make this for your next taco Tuesday.
- 1 1/2 lb ground beef
- 1 diced yellow onion
- 1/2 diced red bell pepper
- 1/2 diced green bell pepper
- 1 cup corn
- 1 cup black beans
- 2 tsp cumin
- 1/4 cup water
- 1 tsp Better Than Boullion or powdered boullion
- 1 cup tomato sauce
- 1 cup salsa
- 3 Tbsp taco seasoning
- 1/4 cup ketchup
- 1 cup shredded cheddar cheese
- 6–8 toasted brioche buns
In a large skillet add the beef and onions and cooking until beef is fully cooked. Remove beef from pan to drain and set aside.
In the same pan you just cooked the beef in, add the canola oil, red bell pepper, green bell pepper, corn and black beans and cook for, stirring often, until the bell peppers are soft.
Add in the cumin, water, boullion, tomato sauce, salsa, taco seasoning and ketchup. Cook at simmer for 5-6 until the sauce is thick.
- Spoon the mixture on to the base of toasted buns. Sprinkle the shredded cheddar cheese over the beef mixture and place the top of the bun on. Makes 6-8 sloppy joes.
