Skillet Turkey Tetrazzini and a giveaway!

by Laura

Did you know that Hellmann’s® Mayonnaise can help transform your holiday turkey leftovers into a delicious meal?
Neither did I until I recently tried this delicious Skillet Turkey Tetrazzini recipe. The creaminess of the dish comes from 1/2 cup of Hellmann’s® Mayonnaise. I never would have thought to use mayo this way, but now it has me thinking of other fun ways to use it.
Hellmann’s® is on a mission to help moms re-think main dish meals and leftovers by offering easy, delicious recipes that are great for the busy holiday season, such as turkey casserole,“stuffing” crusted turkey cutlets and this skillet turkey tetrazzini.
You can take a break from the holiday hustle and bustle and join in each week at Hellmanns.com as Turkey Casserole goes head-to-head with other tasty, juicy turkey recipes.
Cast your vote at Hellmanns.com for your favorite and enter the sweepstakes for a chance to win one of four $250 grocery gift cards each week. If there are more than 10,000 entries, the prize value doubles to a $500 grocery gift card!*
For more information on the recipe challenge or Hellmann’s® products and recipes, you can visit Hellmanns.com.
I have checked out some of their turkey recipes and have a list of them I can’t wait to try with my holiday leftovers, including Turkey Turnovers, Turkey N Stuffing Dijon, Creamy Baked Turkey, and Turkey Casserole!
*No purchase necessary. Void where prohibited. The Hellmann’s Turkey Challenge is sponsored by Conopco, Inc., d/b/a Unilever. Open to legal residents of the 50 U.S. & D.C., 18 & older. Begins 12:00 a.m. ET on 9/12/11 & ends 11:59 p.m. ET on 12/5/11. For official rules, visit Hellmanns.com.

Skillet Turkey Tetrazzini

Ingredients

Scale
  • 2 Tbsp. I Can’t Believe It’s Not Butter!® Spread (I just used butter)
  • 8 ounces sliced mushrooms (I only did half this since my family doesn’t love mushrooms)
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 2 Tbsp. all-purpose flour
  • 11/4 cups chicken broth (I used 1 1/4 cup water and crushed a bouillon cube)
  • 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
  • 2 cup cut-up cooked turkey (chicken would also work)
  • 8 ounces linguine, cooked and drained
  • 1 cup frozen green peas, thawed
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Melt spread in 12-inch skillet over medium-high heat and cook mushrooms and onion, stirring occasionally, 5 minutes or until vegetables are golden. Reduce heat to medium.
  2. Stir in garlic and flour and cook, stirring constantly, 2 minutes.
  3. Whisk in broth and Hellmann’s® or Best Foods® Real Mayonnaise; bring to a boil.
  4. Reduce heat and simmer, stirring occasionally, 2 minutes or until thickened.
  5. Stir in turkey, linguine, peas and cheese and cook 2 minutes or until heated through. Season, if desired, with salt and pepper.

The tetrazzini looks really good, but I’d probably choose the Creamy Baked Turkey. I love anything that has cream cheese in it! Thanks so much.
