Mini No-Bake Nutella Cheesecakes

Today’s recipe is for the mom who is a chocolate lover or Nutella lover.  These mini no-bake Nutella cheesecakes may only take a few ingredients to make but it tastes DIVINE.  My family isn’t even a fan of Nutella like I am and they loved it.  It is a good thing this recipe made 6 cheesecakes and I have 5 people in my family.  The extra one  was devoured by me the next day while everyone was gone, I just could not resist.  Each serving is also very generous and could be shared, but why do that?

This recipe could be easily made into a regular sized pie if you prefer, but I love the individual portion controlled servings.  Not only are they cute but there is just something special about your own individualized dessert.  The filling would also be great to use inside a crepe.  Heck, I could just eat it by itself with a spoon.  Be prepared to become addicted if you make this, there is no turning back.  You will dream about it when you sleep, it is heavenly.

I used the new Triple Double Oreo cookies to make this.  I loved that it has the regular filling plus the chocolate filling.   It helped ramp up the chocolate level for this dessert.  However, by all mean, the regular ones can be used too and I included how much to use if you go for those in the recipe.  I also prepared some in these Wilton Perfect Results 4 Inch Round Tart/Quiche Pans and others in these 8 oz dessert dishes.

Ingredients
  

  • 12 Double Oreo cookies or 18 regular Oreos
  • 2 Tbsp butter melted
  • 8 oz light cream cheese softened
  • cups nutella
  • 1 tsp vanilla extract
  • 1 ¾ cup whipping cream
  • 3 Tbsp powdered sugar
  • 3 Ferrero Rocher candies chilled and chopped

Instructions
 

  • Crush the Oreos into fine crumbs. I do this by placing them in my food processor.
  • Stir the butter into the cookie crumbs and divide the crumbs between 6 (8 oz sized) individual serving dishes such as - mini tart pans, mini trifle or dessert dishes, glass custard dishes, etc. If using the tart pans, press the crumbs to the bottom and sides of the pan. If using any other dish, just press the crumbs into the bottom of the dishes using the back side of a spoon. Place crusts in the fridge while you prepare the filling.
  • In large bowl, beat the cream cheese until fluffy. Add nutella and vanilla; beat until smooth and well combined.
  • In another bowl, beat the whipped cream and powdered sugar until medium or firm peaks form.
  • Set aside one cup of the whipped cream mixture for topping. Cover and refrigerate.
  • Add 1/3 of the remaining whipped cream to the nutella mixture and fold until combined. Add the remaining 2/3 of the whipped cream and fold until blended well.
  • Remove crusts from the fridge and divide the nutella mixture between the 6 dishes using a spoon.
  • Cover the dishes with plastic wrap and refrigerate for 2 to 8 hours.
  • Pipe or spoon some of the reserved 1 cup of whipping cream onto the top of each cheesecake. Then sprinkle with the chopped Ferrero Rocher candies.

  11. We visited Europe a few years ago and become huge Nutella fans. I had never had it before we went…but man we are hooked now! I am gluten free, so I think I will make this and just forget the crust part…I’m sure it is delicious without it!
