Here is the menu plan Monday – week 53.

  • Fruited Tuna Salad Pitas – The intent of this salad is to serve on a whole pita and eat it like a taco.  However, it would also work well inside a pita pocket if you’d prefer it that way.
  • Slow Cooker Meatball Minestrone – This soup is full of veggies and mostly comes from cans. It also incorporates frozen Italian meatballs and is made in the slow cooker. Those Italian meatballs really add to the flavor of this dish.
  • Cheesy Lasagna Rolls – These lasagna rolls were yummy, easier to dish up, and a little easier  to make than regular lasagna. You don’t have to spend time layering all the layers. Just spread the filling on the noodles and roll ’em up. Loved them.
  • Quick Crustless Quiche –  I found a quick crustless quiche on allrecipes.com. Then I adapted it to be close to my original recipe and it turned out great. This recipe is the result. It’s a quick and easy recipe to whip together.
  • Loaded Potato and Chicken Casserole – This does take an hour and a half to bake but is well worth it. You get all the flavors of a loaded baked potato along with tender bites of chicken. I hope you enjoy today’s Menu Plan Monday.
