Here is the recipes for Menu Plan Monday – Week 35.

  • Balsamic BBQ Beef Skewers – These balsamic bbq beef skewers come together in about 25 minutes! The simple sauce is what makes these soooooooo tasty! If you don’t like tomatoes, feel free to leave them off. You could even swap them for another vegetable like onion or mushrooms.
  • Grilled Chicken Bruschetta Thin Crust Pizza – The base of this grilled chicken bruschetta thin crust pizza all begins with a simple flour tortilla.  Tortillas work so well for thin crust pizza.  Then to make this pizza yummy and summery it gets a bruschetta topping. 
  • Chicken and Roasted Red Pepper Sandwiches – A big bonus with this sandwich is the chicken is prepared in the slow cooker. Slow cooked meals are such a great option for summer. They save energy and don’t heat up the house.
  • BBQ Pulled Pork Nachos – This takes your usual BBQ to a new place, on top of nachos. Basically we are swapping out a bun for tortilla chips.
  • Hearty Eight Layer Salad –  I love this hearty eight layer salad because it is a combination of a green lettuce salad and a pasta salad. The layers consist of romaine lettuce, small shell pasta, hard boiled eggs, salami, peas, dressing, shredded cheese, and parsley. My favorite part of the salad is the salami!
