Instant Pot Pork Tacos

Tacos are a staple in my meal rotation, but I’m always changing up what kind to make. Chicken, beef, pork, or shrimp – any kind of tacos will do. I love it too when I can make awesome tacos with just a few ingredients just like with these Instant Pot Pork Tacos.

These tacos only take 4 ingredients to make – olive oil, diced tomatoes, taco seasoning, and pork roast. This is also prepared in the Instant Pot. It does take 90 minutes to cook, but that is still way faster than making it in a slow cooker. Now if you don’t have an Instant Pot, you can always sear the roast in a skillet with the oil and then cook it in a slow cooker for 8 or so hours on low. You will end up with similar results.

After this roast cooks, it is nice and tender. It is so easy to shred. The roast just falls apart for ya. Fill it in corn or flour tortillas and top with whatever topping you like. I did keep it simple when I made these using cheese and sour cream. I probably would have used some lettuce and guacamole, but I didn’t have any on hand.

Ingredients
  

  • 2 Tbsp olive oil
  • 1 2-3 lb pork roast
  • 1 16 oz can petite diced tomatoes
  • 1 pkg taco seasoning

Instructions
 

  • Turn your instant pot on to saute. Add in the olive oil and seer pork roast on each side.
  • Add in tomatoes and taco seasoning. Place lid on instant pot and make sure the valve is set to seal.
  • Select meat setting and set for 90 minutes.
  • Shred pork and serve on tortillas with desired toppings.
