This time of year is the season for the hot sandwich. Warm meat served over bread with gravy. Mashed potatoes on the side makes it even better. Well, today I have an Instant Pot hot beef sandwich for you.
The thing about roasts is they do take a bit to cook in the pressure cooker, but it is way less than a slow cooker. This roasts takes just under 80 minutes to make. You add the potatoes into the instant pot during the last 8 minutes of cooking to cook along with the roast. If you would rather cook them sepreately then you can.
Then you mash those potatoes, slice the roast and mix up the gravy in the Instant Pot. You use the drippings and mix in 2 pacakges of beef gravy mix and some water for the gravy. If needed to thicken it more, you can add some cornstarch mixed with water. You will love this hot roast beef sandwich.
