Icy Coconut Limeade

by Laura

Lime with coconut is pairing up again today for another fabulous lime recipe. This time in a cool icy coconut limeade drink that really only takes 2 ingredients to make (ice and water don’t count as an ingredient in my book).

You are gonna want to make this one throughout the summer! The tropical flavor is the perfect taste of summer and it’s icy goodness is just what you need to cool off on a sunny summer day.

This works best if you have a great high powered blender. You end up with a nice thick drink. However, if you have a regular blender, just start slow with the ice and you may not be able to get the entire 4 cups of ice added.

Icy Coconut Limeade

Ingredients

Scale
  • 3/4 cup Lite Coco Lopez cream of coconut (found on the drink isle)
  • 4 Tbsp frozen limemade concentrate, thawed
  • 1/2 cup water
  • 4 cups of ice

Instructions

  1. Place the ingredients in order into a high powered blender and blend until smooth. If using a regular blender, slow blend in the ice a cup at a time. You probably won’t get the full 4 cups in. Serves 4-6.
