Right now, I am really craving those cool crisp autumn days that I know so well.  We aren’t quite to fall weather here yet in Utah.  We are still hanging out in the 80’s.  I am worried I won’t get to enjoy much fall weather and that we are going to go right from summer to winter with 2 weeks in between that would be called fall.  I guess I will just have to enjoy whatever we get. Since the weather is so warm, we are still taking advantage of the chance to grill our meals.  Today’s recipe is a good one.  The Honey Lime Grilled Chicken soaks in a simple marinade made from 3 ingredients.  

All you need is some bottled Italian dressing, lime juice, and honey! It is simple, easy, and delicious – three requirements that a busy mom loves. Use chicken breasts or chicken tenders.  I made this recipe for a family get together and it got great reviews.  It is one that I will be using often.  This honey lime grilled chicken would also be great served up on top of a salad.

Here is what you need to make the

  • ITALIAN DRESSING
  • LIME JUICE
  • HONEY
  • CHICKEN BREASTS OR CHICKEN TENDERS (I USED TENDERS)

Honey Lime Grilled Chicken


Ingredients

Units Scale
  • 1 cup Italian dressing
  • 1/4 cup lime juice
  • 1/2 cup honey
  • 45 chicken breasts or 12-15 chicken tenders (I used tenders)

Instructions

  1. In a gallon side freezer bag, add the Italian dressing, lime juice, and honey. Whisk to combine and then add the chicken.
  2. Place in the fridge and allow to marinate for 5-8 hours.
  3. Preheat grill to medium. Remove chicken from marinade and place on the grill. Grill until fully cooked, about 6-7 minutes per side for breasts and 2-3 minutes per side for tenders. Be careful not to over cook or you will get dry chicken. Serves 4-5 people.
