Herbed Chicken Salad

Most of the chicken salad recipes I have include fruit. This herbed chicken salad recipe does not. This is a fun change from my regular salad recipes.

This recipe is fairly simple. It only takes 7 ingredients plus salt and pepper. You have cooked chicken. Rotisserie chicken is a great option for this. Then you have mayo. I used light mayo to reduce the fat.

Next up is the herbs. There is fresh flat leaf parsley, fresh chives, dried dill weed, and dried minced onion. It’s a great combination. Then there’s some salt and pepper.

Now is where something different comes in. Most chicken salad recipes include celery, but not this one. The crunch in this recipe comes from finely chopped carrot. I just placed some baby carrots in my food processor and pulsed until they were finely chopped. It’s a flavorful addition. Then that bright orange color from the carrots adds a nice pop color too. It looks so tasty pair with the green color of all those herbs.

You can serve this salad on rolls or croissants. I buttered and toasted the rolls we had this on. You can also serve it on lettuce leaves or wrapped in a tortilla. I enjoyed mine in a low carb tortilla the second day. The great thing about this chicken salad was it was only 1 point on my Weight Watchers personal points.

  • CARROT
  • FLAT LEAF PARSLEY
  • FRESH CHIVES

  • LIGHT MAYONNAISE

Ingredients
  

  • 3 cups diced or shredded cooked chicken I used rotisserie chicken
  • ¼ cup finely chopped carrot
  • 1 Tbsp chopped flat leaf parsley
  • 1 Tbsp chopped fresh chives
  • 1 ½ tsp dried dill
  • ½ Tbsp dried minced onion
  • tsp black pepper
  • ¼ tsp salt
  • cup light mayonnaise

Instructions
 

  • In a bowl, mix all ingredients until combined well. Refrigerate until serving. Serve on lettuce leaves, rolls, or croissants.
