So, a while ago we got a deal on some new furniture for my front room. What I had was in my front room was this lovely plaid sofa and love seat we purchased when we moved into our home 18 years ago.
The furniture had been originally used in our family, but when we updated the family room, it got moved to my front room. Well, one day there was a sale at a local scratch and dent furniture store. We stopped “just to look” and found a great deal on a sofa and love seat that was more neutral in color and NOT plaid.
After some debate as to whether or not to get it, we decided to go for it. So, we went to go pay and arrange to get the furniture picked up. When we went to pay, they had a deal where you could get a panini grill for like $10 with our purchase if we would like one. I didn’t own one and have always wanted one, so they added it on to our order.
Now I have a Panini Grill
After getting that panini grill, I was excited to use it and made panini‘s for my family. They were really basic – bread, pesto, turkey and provolone. My kids were in heaven. Both my boys fell in love with panini‘s and make them all the time now.
So, since they love them so much, I decided to venture out from the usual and try a new combination for our usual panini. Today’s recipe for Grilled Mexican Panini is what we made. It isn’t a whole lot different from what we usually use. There is still turkey, bread, and cheese. However, it isn’t provolone. We swapped that out for pepper jack. Then instead of pesto we use prepared guacamole (I use Wholly Guacamole) and Kraft’s Chipotle Flavored Mayo.
The mayo is what makes this sandwich amazing. It adds this nice level of creamy and smoky! My oldest son now prefers this panini instead of our usual. I think both are pretty spectacular.
Also, my favorite bread to use for these grilled Mexican panini is Sam’s Club’s french bread! It is like $2.50 for 2 loaves and I get about 6 sandwiches from each loaf. I like these because they are skinnier than the french bread you can get from the regular grocery store. The french bread you can get from Walmart is another great option. The loaves are fatter, but still work great. You can also use a ciabatta roll or if you are a Costco shopper, there torta rolls are good too.
- 1 loaf of french bread, sliced into 4 sections (if you have the Sam’s Club Loaf, slice into 6 sections but you’ll only use 4 of them) or 4 ciabatta rolls
- 1/2 cup guacamole
- 4 Tbsp. KRAFT Mayo Chipotle Flavored Reduced Fat Mayonnaise
- 1 lb. Deli thin slice roasted turkey
- 4 slices pepper jack cheese
