Flautas

by Laura

This is a family favorite at our house. Flautas means flutes in Spanish. These look like little flutes. Flautas are also known as taquitos. Typically the difference is flautas are made with flour tortillas and taquitos are made with corn. Either way, how can you lose with meat, cheese and a tortilla shell that’s deep fried.

Now you could fill them with whatever meat you like, but this is the way I usually make them. Rotisserie chicken also works great in these. I had a partially used can of green chilies in my fridge, so I added that to the meat this time too.

Flautas

Scale

Ingredients

  • 3 chicken breasts
  • 1 Tbsp. Fajitas Seasoning (or your own combination of Mexican seasonings)
  • 1 tsp. garlic salt
  • 10 flour tortillas
  • 1 cup shredded cheese (whatever you like, I used cheddar)
  • oil for deep frying
  • toothpicks
  • toppings of your choice to dip them in such as salsa, guacamole, etc. (I like green enchilada sauce and sour cream)

Instructions

  1. Place your chicken in a crock pot with the fajita seasoning and garlic salt and cook on low for at least 6 hours. About 1 hour before you want to eat, remove chicken from the crock pot.
  2. Shred the chicken and allow to cool for about 30 minutes. Then mix in shredded cheese.
  3. Now it’s time to fill the tortillas. Warm your tortillas in the microwave. They will be easier to roll up. Put some of the chicken at one end of the tortillas and roll up jelly-roll style and secure with a toothpick. See how it looks like a flute.
  4. Then deep fry these babies until golden brown and enjoy dipping them in whatever you like.

These sound so much better than the kind you get in the freezer section at the grocery. I’ll have to try them.
