Cupcakes are always a fun choice. I highly recommend these recipes:

Pink Lemonade Cupcakes – This cupcake just starts off with a doctored up cake mix to make it unbelievably moist and tender.  It also includes some lemon zest and powdered pink lemonade mix.  Then the frosting gets some lemon zest and pink lemonade concentrate.

Strawberry Cupcakes – These cupcakes get their strawberry flavor from actual strawberries (frozen with syrup) in addition to strawberry gelatin.  The gelatin also give it moistness. 

Perfect Lemon Cupcakes – These little cupcakes are lemon perfection. The cake is so tender and moist, it was absolutely mouth watering. I love the frosting, but must warn you it is very full of lemon flavor. This is one recipe that I always get asked for after taking them anywhere.

 Red Velvet Cupcakes – What makes this cupcake extra special is the frosting. The addition of a little cool whip.  LOVE IT!  As a result, you still get that yummy delicious cream cheese flavor, but the cool whip adds a nice lightness to the frosting.

Is you mom a cheesecake lover?

This white chocolate cheesecake that I shared at Valentine’s would also work well to show mom that you love her! I must say that the taste of this cheesecake is AWESOME! I make the hearts with store bought raspberry sauce.

Is mom a cream puff fan?

How about this strawberry cream puff pie? This filling uses orange rind, which I think I love more than the lemon. Next, you add fresh strawberries to that and it’s even better.

Or lemon cream puffs? This one is filled with a lusciously light lemon cream. Light, lemony, and delicious! 

Eclairs are always a good choice.  

I have created my version of the perfect homemade eclairs to make at home. Of course, I have made it easy. No filling from scratch, boxed pudding mix helps out there. Really, you can make these!

Or you could go for éclair torte or éclair pie. For the éclair torte recipe, you make that crunchy, chewy pastry shell just like you would for the éclair, but instead of piping it out in the individual eclairs you spread it into a 9 x 13 pan.

For the éclair pie, I have been making that recipe since I was a girl. It’s the one with the layers of graham crackers, pudding and frosting. 

Or how about something key lime?  

You can opt for easy key lime pie. There really is no excuse with this recipe.  ANYONE can make this key lime pie recipe.  I really feel it is foolproof.

Or try these no bake mini key lime pies. It includes some of the usual ingredients found in a key lime pie like sweetened condensed milk and key lime juice. However, instead of using eggs as the stabilizer it uses some cream cheese and gelatin.

Or lastly, there is key lime fudge. It has ingredients I use to make my key lime pie. It includes key lime juice, lime zest, and sweetened condensed milk. Whatever you decide to make mom will be extra special because the recipe will include love.
