Easy Wacky Cake

This easy wacky cake would be a perfect serret for Valentine’s Day. This cake is also known as depression cake, war cake, or crazy cake. This cake contains no milk, eggs, or butter. This recipe came about during The Great Depression where milk, eggs, and butter wer too expensive or hard to get.

This is a great cake for those who have dairy or egg allergies. It is also vegan. Even if you don’t have allergies or eat a vegan diet, it’s still delicious. It is a very dense delicious chocolate cake. It is great topped with a dusting of powdered sugar. However, it is also get topped with whipped cream and fruit or a good old chocolate frosting.

Ingredients
  

  • 3 cups flour
  • 2 cups sugar
  • ½ cup cocoa
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla
  • ½ cup vegetable oil
  • 2 Tbsp white vinegar
  • 2 cups cold water

Instructions
 

  • Preheat oven to 350 degrees.
  • In a bowl, whisk flour, sugar, cocoa, baking soda and salt together. Make 3 wells in mixture.
  • Add vanilla, oil and vinegar to each of the wells. Pour in cold water and whisk together until no lumps are left.
  • Pour into an ungreased 9×13 baking pan. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool before cutting. Dust with powdered sugar or top with frosting.
