Tacos are a staple meal at our house. We like all types – beef, chicken, pork. I was thrilled to find this recipe for easy healthy beef tacos. It works for my current weight loss journey on WW and the family liked it.
The level of spice was fine for my daughter and I. However, it was a little too spicy for my husband. He has had health issues that have messed up his stomach and it just can’t tolerate food with much spice to it. So next time I am going to try to half the amount of coriander and see if it will work better for him.

- In a large nonstick skillet over medium heat brown beef with the onion. Drain off any excess grease if needed.
- Add garlic, cumin, coriander, and salt. Cook for about about 1 minute until fragrant.
- Add tomatoes and cook, stirring occasionally, until liquid is almost evaporated, 4–5 minutes.
- Divide beef mixture evenly among tortillas; top evenly with lettuce and cheddar cheese. Serves 4.
