Cinco de Mayo Fab Five

One week from today is Cinco de Mayo. So, I decided to go through my archives and create a Cinco de Mayo fab five that would be the perfect way to celebrate!  This one was REALLY tough since my family loves Mexican food and I have many yummy recipes.  You can always check out my Mexican category for even more recipes.

First off is crock pot refried beans.  These are easy to make and so tasty.  This recipe is also in my cookbook if you happen to have a copy!

Next is a post is a fab five post I did this year with my 5 favorite ways to mix up regular old tacos, YUM!

My favorite filling for burritos, enchiladas, tacos etc is shredded beef.  I love this Southwestern beef.  Not only is it full of flavor, but is a breeze to make thanks to the slow cooker!

This one is an oldie but a goodie.  I shared this recipe the first year of my blog, hence the photo quality.  This is a fun change with enchiladas.  It has spice to it along with the tang of lime and that sweetness of the honey.  Definitely a family fav here!

The last of this Cinco de Mayo Fab Five is a dessert.  You can’t have a Cinco de Mayo celebration with out a sweet treat to end the meal, right?  I absolutely love this strawberry quesadilla.  You stack tortillas that are spread with a yummy cream cheese mixture on them.  You end up with the nice stack that you slice like a pie and top with strawberries!
