Eggnog Cookies

Another classic Christmas flavor is eggnog. I have made eggnog muffins, eggnog pancakes, eggnog french toast, eggnog syrup, and even eggnog hot cocoa before. So why not make eggnog cookies? I must admit, I am not a fan of eggnog on it’s own. I can tolerate if it is thinned down with some Sprite. It is just too thick and creamy for me to drink. However, add eggnog to a recipe where I can get the flavor and I am totally on board.
These cookies showcase this seasonal flavor very well. There is eggnog in the cookie itself in addition to the glaze. The flavor is just enough and not too over powering. I think anyone would love these cookies, even if they don’t like eggnog.

Begin by beating some sugar and butter together in a bowl with an electric mixer until fluffy. Next, you add in some eggnog, vanilla, and egg yolks. Beat with mixer until smooth. Then add in some nutmeg, flour, baking powder, and cinnamon. Mix in just until combined. Do not overmix.
Spoon the cookie dough onto ungreased cookie sheet. You want to make these cookies on the smaller size because the dough does spread. I made mine around 1 1/2 Tbsp. Bake at 300 degrees for 15-18 minutes until edges just start to brown. Yes 300 degrees is correct. Remove from cookie sheet and allow to cool.
While they cool you can mix together some powdered sugar and eggnog to create the glaze. Drizzle glaze over cooled cookies and sprinkle with some additional cinnamon if you want. I think it makes them look pretty.

- 1 ¼ cup sugar
- ¾ cup butter softened
- ½ cup eggnog
- 1 tsp vanilla extract
- 2 egg yolks
- 1 tsp nutmeg
- 2 ¼ cup flour
- 1 tsp baking powder

Glaze:
- 1 ½ cup powdered sugar
- 3-4 Tbsp eggnog
- additional cinnamon for garnish
Instructions
- Preheat oven to 300 degrees (this is not a typo - 300 is the correct temp for these cookies)
- In a large mixing bowl, beat the sugar and butter together with an electric mixer until fluffy.
- Add in the eggnog, vanilla, and egg yolks. Beat with mixer until smooth.
- Then add the nutmeg, flour, baking powder, and cinnamon. Mix in just until combined. Do not overmix.
- Spoon onto ungreased cookie sheet. You want to make these cookies on the smaller size because the dough does spread. I made mine around 1 1/2 Tbsp.
