Truck Stop Pancakes


Ingredients

  • 5 eggs
  • 1 1/2 cups milk
  • 6 Tbsp butter, melted
  • 5 cups buttermilk
  • 5 cups flour
  • 5 tsp baking powder
  • 5 tsp baking soda
  • 1 pinch salt (optional)
  • 5 Tbsp sugar

Instructions

  1. In a large bowl, whisk together the eggs, milk, butter and buttermilk.
  2. Add in the flour, baking powder, baking soda and sugar. Stir to combine just until the dry ingredients are blended in. At this point for can adjust the thickness of the batter to your liking by adding more flour or buttermilk if need.
  3. In a non-stick pan over medium heat, pour 1/4 cupfuls of batter onto the pan and cook until bubbles appear on the surface. Turn and cook until browned on the other side. Serves 12.
