Tomato Sausage Zucchini Pasta

  • 1 lb rigatoni
  • 3 Tbsp olive oil
  • 1 onion, chopped
  • 1 lb Italian sausage (I use mild)
  • 5 cloves garlic, minced
  • 1 (8 oz) tomato paste
  • 1 (10.5 oz) container grape tomatoes
  • 1 cup chicken broth
  • 2 small zucchini, diced
  • 1 tsp salt
  • black pepper, to taste
  • a handful of fresh basil, chopped
  • freshly grated Parmesan cheese


  1. Cook pasta according to package directions.
  3. Add in the tomato paste, tomatoes, broth, salt and pepper. Cook, stirring occasionally, until the tomatoes begin to burst and give off their juices, about 10 minutes.
  4. Add in the zucchini and cook for 5 minutes.
  5. Once the pasta is cooked, drain reserving a 1 cup of the pasta water.
  6. Toss the pasta immediately into the pot with the sauce and stir well to combine. Add in some of the reserved cooking water, if needed. Finally, stir in the basil.
  7. Top with cheese to serve. Serves 6.
