Southwest Grilled Chicken

Ingredients

  • 1 ½ tsp smoked paprika
  • ¾ tsp coarsekosher salt
  • 1 ½ tsp ground cumin
  • ¾ tsp garlic powder
  • ½ tsp dried basil
  • ¼ tsp black pepper
  • ¼ tsp cayenne peppermore or less to taste
  • 4 Tbsp canola oil
  • 4-6 thin cut chicken breasts

Instructions

  1. Combine the smoked paprika, salt, cumin, garlic powder, basil (or Italian seasoning), black pepper, cayenne pepper, and olive oil in a gallon sized ziploc bag. Knead to combine ingredients.
  2. Add in the chicken and knead to coat. Place in the fridge for up to 8 hours.
  3. Preheat an outdoor grill to medium or medium-high. (Alternately, you could cook the chicken in a skillet on the stove or broil in the oven.) Grill for 4-6 minutes per side until cooked through. Serves 4-6.
