Napa: The Culinary Institute and a Giveaway

by Laura

Today is my last post about my oh so fabulous Napa trip.  I am so grateful for the chance to go and let me say that the people at Bush’s Beans and Edelman sure know how to treat a girl good!  I felt like I was hanging around with family the whole time  Everyone there was wonderful.  I am also thrilled about the opportunity I had to cook alongside everyone and learn from such great chefs while at a fantastic location.

The Culinary Institute looks like a majestic castle.  It is gorgeous.  The kitchen we got it cook in was fabulous.  I am really jealous of the whole garden area that they have right in front of the building.  It has rows of fresh herbs and veggies.  They just send students out to the rows to snip or pick what ever they may need for their cooking.  Then right across from the school is a beautiful vineyard.  It was all just breath taking to see.

  • Spices/ingredients for recipes: Tahini paste, cumin, smoked paprika
  • Culinary Institute of America/Napa items: Spoon rest, dish towel, Olive Press citrus olive oil

To enter, leave a comment on this post sharing your family’s favorite recipe that includes beans.  If you need some inspiration I have a whole category of recipes devoted to beans that you can peruse.  You have until Monday Nov. 8 at midnight (MST) to enter.

My family loves TACO SOUP with pinto, black and kidney beans. It makes a great dinner with LOTS of left overs and even freezes well.

My grandmother passed away last year. I have been craving her beans and cornbread. I can’t cook them like she could. I know it’s beans it shouldn’t be that hard but she must have had a special step or something because nothing I do works.

I don’t know if this concoction has a name, but it was something I just threw together the other night & it was so delicious.
1 can black beans
1 can diced tomatoes with basil
some diced onion
salt
pepper
basil
oregano
minced garlic (from jar since I’m lazy)
splash of balsamic vinegar
Heat thoroughly. ( All seasonings are to taste since I never measure them)

My favorite bean recipe has to be Bean and Ham soup. Whenever I make this I am reminded of my dear Dad. This was the first meal I made for him when I moved into my apartment. And it was the last meal I made for him twenty-five years later, before he died unexpectedly. Chopping the onions always brings me tears of sadness and joy. Also, he was a great ham! Always bringing laughter and joy where ever he went. This soup always warms my tummy and my soul.

And during the summertime, she makes us Black Bean and Avocado Salad!:

Honestly, though, my favorite way to eat beans is plain with some cheese and rice.

My husband’s favorite is his own concoction of chili-he doesn’t have a recipe, he just throws in what he likes-beans,tomatoes, ground beef, onion, a little chipotle pepper.
For a family dinner, we like to cut up ring sausage, brown it up, stir in Bush’s baked beans, a little extra brown sugar and BBQ sauce and let it simmer. Yum!
