Italian Seasoned Roasted Potatoes

  • 2 lbs scrubbed and diced russet potatoes (about 3 1/24 cups)
  • 1/4 cup olive oil
  • 1 Tbsp Italian seasoning
  • 1 tsp sea salt
  • 1 tsp onion powder
  • 1 tsp garlic powder


  1. Preheat oven to 400 degrees.
  2. Line a large baking sheet with parchment paper or aluminum foil.
  3. In a large bowl, add potatoes. Drizzle with olive oil and toss to coat.
  4. Then season with the Italian seasoning, sea salt, onion powder, and garlic powder. Toss to evenly distribute the seasonings.
  5. Pour out onto the lined baking sheet. Bake at 400 degrees and bake for 20 minutes, stirring  15 and then cook for another 20 minutes. Serves 6.


These are also great to serve with shredded cheese. Just sprinkle some over the potatoes after cooking and place back in the oven for a minute or two until melted.
