  • 2 ounces rice vermicelli noodles
  • 1 tsp toasted sesame oil
  • 1 cup very thinly sliced red cabbage
  • 2 medium carrots, cut into strips with a julienne strips
  • 1 mango, peeled and cut into strips
  • 1 red pepper, cut into strips
  • 2 Persian (mini) cucumbers thinly sliced into strips
  • 1 green onion, green parts cut into 3 inch pieces
  • ¼ cup roughly chopped fresh cilantro
  • ¼ cup roughly chopped fresh mint
  • 8 sheets rice paper (spring roll wrappers)
  • Peanut Sauce
  • ⅓ cup creamy peanut butter
  • 2 Tbsp rice vinegar
  • 2 Tbsp reduced-sodium tamari or soy sauce
  • 2 Tbsp honey
  • 1 Tbsp toasted sesame oil
  • 2 cloves garlic, pressed or minced
  • 2 to 3 Tbsp water, as needed
