Flashback Friday – Topsy Turvy Taco Bake

Today we are flashing back to a post that I shared back in August of 2008. It is a fun variation on the usual taco night. It is called topsy turvy bake because you bake it with the meat on the bottom followed by a cornbread topping. Then when you serve it you invert each piece so the cornbread portion is now on the bottom and the meat part is on the top.  Then you can top it with shredded cheese, lettuce, salsa, sour cream etc.

This also works great with fried bread dough. I thaw a loaf of bread dough and then let it partially rise. I cut out chunks and stretch it like a small pizza. then deep fry the disk flipping it as it browns. Then drip it on a paper towel and put the entire taco into the pocket of bread dough. Makes an awesome meal.
