Southwest Egg Puff – Flashback Friday

If you love eggs for your breakfast and love them with cheese, then this Southwest Egg Puff is for you. It is a nice protein packed dish that incorporates eggs, cottage cheese and Monterrey Jack cheese.

I recently discovered that your can get more grams of protein in 8 oz of low-fat cottage cheese (27g) than in 6 oz or nonfat greek plain yogurt (17g). Personally, I would much rather eat the cottage cheese over the yogurt.

Serve this Southwest Egg Puff up for any breakfast, but Christmas would also be a great time to serve it.
